Oven Fried Chicken

Oven Fried Chicken

Ingredients (serves 4)

1 chicken (about 4 lb.), neck removed, cut into 8 pieces

2 large eggs, beaten to blend

6 slices (about 5 oz.) of bread

1/2 cup finely shredded sharp cheddar cheese

4 teaspoon ground dried ancho chilies or chili powder

1/2 teaspoon salt


1. Toast all slices of bread. Allow it to be cold. Tear each slice into 1 inch chunks. Whirl those chunks in a food processor to make coarse crumbs.

2. In a large shallow bowl, mix bread crumbs, ground chilies, cheese and salt.

3. Rinse the chicken and pat it dry. Dip the chicken in beaten egg and roll it in crumb mixture to coat. Place it on a foil lined baking sheet.

4. Bake for 45 minutes to 1 hour in a 375 C regular or 350 C convection oven until crumbs are browned and chicken is no longer pink at the bone.
