Masala Aloo Kulcha

Ingredients

For dough:

Maida [Plain flower] 250gm

Sugar 1 tsp

Baking powder 1/2 tsp

Baking soda 1/2 tsp

Oil 1 tbs

salt 1 tsp

Curd 1/2 cup

black sesame seed 1tbs

Butter

For filling:

Mashed Potato[large] 2

Chopped green chilly 1 tsp

Chopped ginger 1 tsp Amchur powder 1 tsp

Chilly powder 1 tsp

Ajwain 1 tsp

Garam masala powder 1 tsp

Chopped coriander 1 tbs

Method

1. Take maida and all ingredients in a large bowl, mix all to make a dough, adding water to make it smooth.

2. Kneed the dough min 10 min, set aside covering with wet kitchen towel. Leave the dough approx 2 hrs.

3. In a bowl take mashed potato with all ingredients, mix it well.

4. Take a ball size maida from the dough, roll it about 5 inch thick, fill it with ball size aloo stuffing, start pleating and make sure its secure and tight, sprinkle some sesame seeds and chopped coriander over it, press gently and roll over to make a round shape. Brush water to bottom side.

5. heat the tawa, place the wet side of kulcha over the hot tawa, press lightly, cook for about 2 mins on this side, then turn the tawa to the flame and cook all sides/over the kulcha.

6. Remove gently from the tawa, Spread the butter on each kulcha and serve with fresh curd.
